Inside, the action revolves around a mirrored central stage, with the dancers kept close and the room moving at a pretty relentless pace. Shark has also gone surprisingly high-tech: drinks can be ordered from tablets at the tables, with your running bill visible as you go - a small touch that feels unusually modern for Cowboy. Upstairs, a separate VIP lounge adds another stage and a more polished setting when you want to move away from the main-floor energy.

It’s bright, fast-moving and confidently contemporary without losing the close-up feel that made the bar a longtime Cowboy name.
